What's the problem?

Gluten is a protein in wheat that has been shown to cause distress to the body and the immune system. This impact of gluten can be seen even in those without celiac disease or gluten sensitivity as well.

Most people have a problem with gluten, they just haven't made the connection. 

 

People with Celiac disease, an autoimmune disorder, are severely impacted by gluten. People with gluten intolerance also experience discomfort with gluten ingestion though not at the same scale as Celiacs, but distressing nonetheless. 

 

The success of Ketogenic and Paleo diets has proven the importance of going gluten free to manage weight and chronic illnesses like diabetes as well as autoimmune diseases. Gluten free diet has been found beneficial for people with autism. 

Going gluten-free makes people realize how much they were suffering with little discomforts that are taken as part of 'growing old'. No, you don't have to wake up with your muscles hurting, your joints stiff. You don't have to wake up in the morning feeling like you just didn't sleep enough. You don't have to go through the day lethargic and constantly fatigued. You don't have to spend your day in a haze, be forgetful or have trouble thinking clearly. You don't have to live with random aches and pains, unexplained skin issues, recurrent headaches, bloating, heartburn and digestive issues and balance issues (ataxia). 

 

None of these is a part of 'growing old'. They are a result of what you put in your body. 

Gluten Free

It's gluten free, what could go wrong?

Lots! Gluten gives a certain texture to baked goods that is not quite easy to get in non-gluten products. So, often a whole lot of not-so-good-for-you ingredients are added so that the end product can mimic gluten.

 

A lot of these additives like starches, gums and soy can be harmful to the gut. Starches are not necessarily evil, but an excess of these makes the end product high glycemic, meaning consuming them will produce a spike in blood sugar. Gums in small quantities are also not an issue, trouble arises when these are used in excess as they can be harmful to gut health. 

 

Soy is a very effective ingredient that makes gluten free products identical to gluten products, But, Soy is an endocrine disruptor and deserves it's own header for the havoc it wreaks on our bodies. There are several studies on how soy adversely affects hormones and is implicated in major health complications.

Why Chiffon Tree?

Chiffon Tree products are not only for the Celiacs or the gluten-intolerant, they are for anyone who cares for their health and wishes to eat a superior quality product which is a nutrient dense and truly flavourful treat.

Chiffon Tree products are low on starches and gums, high on protein, and avoid soy.

Chiffon Tree cakes and cupcakes have a significantly superior nutrition profile to ordinary gluten-based products in general, and most gluten free products in specific. And they leave you feeling wonderfully sated. 

I only work with the best, real ingredients, and the most authentic versions of those. I don't use any cake gels, humectants, preservatives or emulsifiers. I use Almond flour as the base flour. 

 

I can easily use nutritionally empty ingredients that cost little and offer you a cheap product. But nutrition is extremely important to me as is taste, so I do not work with inferior gluten free flours and only procure the most nutritious and most flavorful ones.

 

 I also do not work with artificial anything. So No fake whipping cream which is reconstituted oil that is usually used by home bakers and commercial bakeries alike,  No oil unless it is Pure Extra Virgin Olive Oil, No artificial essences or flavours. Only the best raw ingredients  -  Real butter, Real cream, Real extracts, Free range eggs, Raw sugar.

Oh and in case you haven't heard yet, which would be a surprise because the cat has been out of the bag for a few years now, Good Fat, that is fats like butter and cream, traditional fats like ghee, tallow, lard, duck fat and coconut oil, olive oil, avocados and eggs are Good for you, your heart, your skin, your hair and overall well being. Health issues are caused by the very foods that are promoted as healthy -  like 'whole wheat', 'egg free', 'fat free','sugar free', soy protein, canola oil etc.  

 

I try to acquire as many organic ingredients as possible. I care for my health and it is equally important for me to offer you the very best of taste, authenticity and nutrition.
